### Ingredients
- [ ] 2 cups wild rice, dry
- [ ] 1 medium yellow onion, diced
- [ ] 2-3 celery sticks, diced
- [ ] 1 red bell pepper, diced
- [ ] 1 ½ cups mushrooms, sliced
- [ ] 1 cup dried cranberries
- [ ] salt and pepper
- [ ] salted butter for frying
### Directions
1. Start cooking the [[wild rice]], this takes about 45 mins.
2. Fry the diced onion and celery in butter until onion is translucent
3. Add in peppers and mushrooms.
4. Add cooked rice, cranberries, and salt and pepper.
### Notes
Optional:
- Add chopped parsley with step 3 if preferred
- Add chopped bacon for a more rich recipe
