### Ingredients
- [ ] 4 cups whole milk
- [ ] ½ tsp table salt
- [ ] ¼ cup lemon juice (from 2 lemons)
### Directions
1. In a saucepan, combine the milk, salt, and lemon juice.
2. Heat over medium-low heat, stirring consistently until it reaches 165ºF.
3. Remove from heat and allow to rest for about 2 minutes, until solid white curds form on the surface.
4. Using a slotted spoon, transfer the curds to a strainer layered with cheesecloth or paper towel (multiple layers).
5. Cover with plastic wrap and allow to drain until the desired texture is reached. Can be stored in the fridge in a sealed container for up to 5 days.
### Notes
- If you don't have lemons, you can use an equivalent amount of white vinegar.
