### Ingredients
- [ ] ¼ cup olive oil
- [ ] 2 shallots, diced finely
- [ ] 4 cloves garlic, minced
- [ ] 2x 16 oz canned white beans (e.g., cannellini, great northern), rinsed
- [ ] 32 oz cherry tomatoes, halved
- [ ] (optional) Chilli flakes for heat
- [ ] salt and pepper
- [ ] 1 stem of basil
- [ ] feta cheese, crumbled
- [ ] olive oil for serving
### Directions
1. Heat olive oil in a pan (add chilli flakes here if you want it nice and spicy)
2. Add diced shallot and cook until soft
3. Add tomatoes and simmer until softened, about 15-20 minutes
4. Add minced garlic, the rinsed beans, and salt and pepper to taste (add chilli flakes here if you want it medium spicy)
5. Serve on nice crusty bread with chopped basil, feta cheese, and olive oil on top (add chilli flakes here if you want it lightly spicy)
