### Ingredients
- [ ] long grain white rice, 1 cup
- [ ] celery, 3/4 cup chopped (about 4 stalks)
- [ ] green onions, 1/2 cups chopped
- [ ] lemon rind, grated
- [ ] pine nuts, toasted (optional)
- [ ] dill, 2 tbsp
- [ ] lemon juice, 3 tbsp
- [ ] olive oil, 1/4 cup
- [ ] sugar, 1/2 tsp
- [ ] salt
### Directions
1. Cook rice as preferred (we use a rice cooker).
2. Stir in celery, rind, dill, and pine nuts (optional).
3. Combine lemon juice, olive oil, sugar, and salt as a dressing.
4. Pour dressing over rice and serve.
### Notes
- Goes well with fish and chicken.
