### Recipe Details
Serves 8-10.
### Ingredients
- [ ] 4 large or 6 medium yellow potatoes
- [ ] 1 cup olive oil
- [ ] juice of 2-3 lemons
- [ ] 4-6 cloves of garlic, whole
- [ ] dried oregano, to taste
- [ ] salt and pepper, to taste
- [ ] water, cold
### Directions
1. Preheat oven to 375ºF
2. Peel and cut potatoes into long wedges, lay in a 9"x11" baking tray
3. Add olive oil, lemon juice, garlic, oregano, salt, and pepper
4. Add water to cover potatoes
5. Bake for ~45 min for soft potatoes or until crisped, if preferred
### Notes
Don't forget to retain the olive oil for leftovers!
