### Ingredients
- [ ] olive oil
- [ ] 6 boneless skinless chicken thighs
- [ ] 1 lemon, quartered
- [ ] 1 shallot, quartered
- [ ] 2 sprigs of rosemary
- [ ] salt and pepper to taste
### Directions
2. Generously cover the bottom of a steel pan with olive oil
3. Add chicken, lemon, shallot, and rosemary to the pan, season with salt and pepper
4. Cover and cook on low for 20 minutes, until thighs register 165ºF
5. Optionally, blend sauce (less rosemary and lemon rinds) for a nice sauce
### Notes
Goes great with [[greek salad]] and/or [[greek lemon potatoes]].
