### Recipe Details Serves 4. ### Ingredients - [ ] 1 chicken breast or equivalent - [ ] 2 litres chicken stock - [ ] 3 eggs - [ ] 3-4 lemons (150-200 mL) - [ ] 1 cup, dry orzo - [ ] 2 tbsp parsley - [ ] salt and pepper to taste ### Directions 1. In a large pot, bring 2 litres [[chicken stock]] to a simmer. 2. In another smaller pot bring salted water to a boil and cook 1 cup, dry orzo al dente. Strain. 3. Meanwhile, add the juice of 3-4 (150-200 mL) lemons to a mixing bowl. Beat in 3 eggs, one at a time. Once the chicken stock is hot, temper the egg and lemon mixture by adding broth while whisking continuously. 4. (optional) Shred or chop 1 breast chicken. 5. Combine the tempered egg and lemon mixture, strained orzo, chicken, and chopped 2 tbsp parsley to the soup stock. 6. Season with some salt and some pepper to taste. ### Notes - We've noticed that the lemons make or break this soup. Taste your lemons before you make this, if they are bitter - maybe better not to make it with them. ### Filed Under #greek #soup --- Last updated: 2024-11-20
